Yet another easy peasy crowd pleasin’ dessert. This is why I’m here guys.
This wouldn’t exist without my best friend Lindsey actually. Ravens didn’t play until late last night so I had the whole day in front of me to cook and blog and be with the friends. I asked her what it would take to be my sous chef and she didn’t even have to think before I had to promise on apple turnovers.
So, here we are.
A recipe I didn’t even plan to make just so happened to take over blog day. I didn’t even get to finish the recipe I’ve been working on all week because of these things. These dangerously delicious fun to photograph but more fun to eat things. I loved these because other than the puff pastry dough, I had everything else at my house. YAS to inexpensive treats. The other yums include apples, brown sugar, spices, cornstarch, and a splash of apple cidar vinegar. Mhm.
The first thing I did was cut up my pastry dough. I used Peppridge Farm which comes in two sheets. The sheets are folded in the box so it’s nearly impossible to avoid cutting down the crease. After dividing each sheet into three rectangles, cutting each of those in half, then making triangles with the squares, I had enough for a dozen apple turnovers.
Actually kidding, the real first thing I did was make my apples. My sous chef peeled, cored, and diced two large Granny Smith apples. I threw those in a skillet with some butter to cook down, then added some brown sugar, pumpkin pie spice, cornstarch, and apple cider. Lately I’ve been getting carried away with the pumpkin pie spice, so just use cinnamon and a pinch of nutmeg if you don’t have any.
After a couple minutes on the stove, the sugar melts and caramelizes, the cornstarch thickens and brings everything together, and the apple cidear gives it that umph. I’m drooling and the whole house smells like you’re inside an apple pie.
Filling these suckers isn’t much more than spooning out the apple mix, covering, and brushing with egg white. A quick 15 minutes in the oven and you have yourself a dozen new friends.
Everyone’s crowded in the kitchen at this point. They’re golden and puffy and smell absolutely delicious, but the fun doesn’t stop here.
I topped mine with a shower of powdered sugar than drizzled with some bottled caramel I have for my late nighte ice-cream emergencies. Go ahead and really impress your friends with some homemade salted caramel. Mhm.
I don’t have any pictures of the filling oozing out, because again I didn’t think this one through, but you can take mine and my friend’s word. This stuff is bomb. Easy to make, easy to eat, and filled with apple deliciousness. I pleased my crowd, now time to please yours. Enjoy!
- 1 box Peppridge Farm puff pastry - thawed
- 2 large Granny Smith apples - peeled, cored, small dice
- 2 T. butter
- 1/4 c. + 1 T. brown sugar
- 1 T. cornstarch
- 2 t. pumpkin pie spice
- 1/4 c. apple cider
- 1 egg white
- 1/2 lemon
- Preheat oven to 400
- Prepare the puff pastry by cutting each sheet into three rectangles, then cutting those in half to make 6 squares. Cut each square at a
- diagonal to create 12 angles triangles. Set aside until needed.
- When chopping the apples, place the cut apples into a bowl with the juice of half a lemon. This will keep them from browning!
- Prepare the apples by melting the butter in a skillet. Add the apples and cook for 5 minutes over medium heat, stirring occasionaly. Add
- the sugar and spice and allow to cook until the sugar is melted and coats the apples. Add the cornstarch and stir in. Add the cider and
- cook until thickened, about 2 minutes.
- Prepare the turnovers by spooning filling into half of the triangles, then topping with the matching remaining half.
- Seal the edges with a fork, brush with an egg white, then bake for 15 minutes or until puffy and golden.
- Top with your choice of powdered sugar, caramel, icing, or remaining apples. Yum.
