Toffee Crunch Banana Bread

Banana bread is one of the simple joys that does not need a reinvention, but some rules are meant to be bent, and this recipe is the exception.  I made this several times over the years as a sheet cake, and though delicious, it never felt right. I have now adjusted the recipe for a perfect loaf – because I imagine if banana bread rules do exist, baking in anything other than a loaf or muffin pan would break them. Heath bar crumbles can be found in the baking aisle in most grocery stores, but you could also toss toffee bits and chocolate chips. Allow an excuse for the bananas to go unused and save this recipe for an absolute treat.

Ingredients
  1. 1 stick unsalted butter, softened
  2. 3/4 cup brown sugar
  3. 3 ripe bananas
  4. 2 eggs, at room temperature
  5. 2 teaspoons vanilla
  6. 1/2 cup sour cream
  7. 1 1/2 cups flour
  8. 1 teaspoon baking soda
  9. 1/2 teaspoon salt
  10. 1/2 teaspoon cinnamon
  11. 1 heaping cup crushed heath bars*
Instructions
  1. Preheat the oven to 350 and grease a 9x5 loaf pan.
  2. Cream the butter and sugar in a stand mixer with the paddle attachment or in a large bowl with a hand held mixer until light and fluffy, about 3 minutes.
  3. Mash the bananas with a fork until it looks like applesauce. Add it to the mixer with the eggs, vanilla, and sour cream. Mix for 1-2 minutes, scraping the sides of the bowl so there are no big clumps of butter/sugar.
  4. In a separate bowl, sift the flour, baking soda, and salt. Add to the wet ingredients and mix until incorporated, being careful not to over mix.
  5. Mix the crushed heath bars and cinnamon together and fold 3/4 of it to the batter until incorporated.
  6. Pour batter into the prepared pan and sprinkle the top evenly with the leftover heath bar crumbles.
  7. Bake for 1 hour, covering with foil the final 20 minutes of cooking. Start to check for doneness after 50 minutes, as every oven is different. The loaf may appear wet, but will be ready once no longer jiggly and a toothpick comes out clean.
Notes
  1. If you cannot find the crushed heath bars in the baking section, you may be able to find the Heath Bar toffee bits without the chocolate coating. If this is the case, use 3/4 cup toffee bits and 1/4 cup of chopped chocolate chunks.
  2. This is a delicious base for banana bread even without the heath bars. You can throw in nuts instead or omit entirely.
